If you want a part we prepare it for you: we peel it and put it under vacuum. Select the desired weight (kg).
The “Spalla”: This needs a lengthy ageing process (15 months) and gets slightly salted, packed into the natural bladder and tied up by hand. It more or less has the same shape as the “Fiocco di Culatello”, and is similarly easier to handle.
Before slicing it keep it soaked in water and wine for 24 hours to soften it up and make it easier to remove the skin and grease the cut with a knob of butter. Keep it in a cool, slightly airy place.
