The Agave farm is an organically run farm. We do not use any poisons for the respect of our children, guests and clientele.
We produce seasonal fruit and vegetables, jams and preserves but mostly extra virgin olive oil and cold cuts, prosciuttos, salami and the like.
The extra virgin olive oil from the Agave farm reviewed by the website Mejor della Gastronomia , is the fruit produced from the love of this land.
In our forests and the surrounding fields we raise free roaming cinta senese pigs; these pigs are legendary for their flavourful meat and their unsaturated fat. From these special pigs we produce:
1)Various cold cuts including: culatello, spalla, prosciutto, salami, coppa, lombo and pancetta seasoned in the Polesine Parmense style in antique cellars, without hurry or any artificial aeration.
2) We also produce lard and guanciale seasoned in the Colonnata style inside the famous Carrara marble vats, these are flavoured with a special mix of herbs chosen for us by Fulvio Pierangelini.
